Irving Knot (Irv) Baxter (Utica (New York), 25 maart 1876 – Utica (New York), 13 juni 1957) was een Amerikaanse atleet, die gespecialiseerd was in de springnummers. Hij was tweevoudig olympisch kampioen (hoogspringen en polsstokhoogspringen), vijfmaal Amerikaans kampioen hoogspringen en eenmaal Amerikaans kampioen polsstokhoogspringen.
