Voedingsstoffen of nutriënten zijn stoffen die onontbeerlijk zijn voor de groei en de instandhouding van een organisme. Voedingsstoffen zijn onmisbaar voor de verrichting van de levensfuncties zoals de opbouw van de cel (bij bacteriën en gisten), of, in het meercellig organisme, van de cellen voor de vorming van de verschillende weefsels. Dieren, schimmels en heterotrofe micro-organismen betrekken daarnaast ook hun energievoorziening uit hun voeding. Planten en autotrofe micro-organismen zorgen zelf voor hun energievoorziening, bijvoorbeeld via fotosynthese. Het menselijk lichaam heeft ongeveer vijftig verschillende voedingsstoffen nodig. Daarvan kan het lichaam de meeste niet of onvoldoende zelf maken: de zogenaamde essentiële voedingsstoffen.
