En raison de leur nombre, on distingue les espèces pathogènes des espèces commensales et saprophytes. Certaines d'entre elles sont étudiées pour leur capacités tumoricides et envisagées pour des traitements contre le cancer. Le genre Streptococcus est souvent associé au genre Leuconostoc car leurs caractéristiques sont très proches et difficilement différenciables encore aujourd’hui.
