La pròpoli (altre volte chiamata al maschile o anche pròpolis, forma greco-latina originaria utilizzata in altre lingue e imitata in italiano) è una sostanza resinosa che le api raccolgono dalle gemme e dalla corteccia delle piante. Si tratta quindi di una sostanza di origine prettamente vegetale anche se le api, dopo il raccolto, la elaborano con l'aggiunta di cera, polline ed enzimi prodotti dal loro stesso organismo. Il colore può variare moltissimo nelle tonalità del giallo, del rosso, del marrone e del nero. L'odore è fortemente aromatico a seconda della pianta da cui viene attinta. La raccolta della propoli è possibile solo in giornate soleggiate e sufficientemente calde, così da permettere alle api di staccare pezzetti di resina dai rami degli alberi, diventando più malleabile.
