البرياني هو طبق من اللحم والخضروات المطهية مع الأرز والذي تُستخدم في طهيه خلطة بهـارات البرياني الهندية، وهو اسم يُطلق في شبه القارة الهندية على الأرز الذي يُطهى بطرق مخصوصة. نشأ البرياني في الهند، وتوجد منه أصناف محلية متعددة ليست محصورة في جنوب آسيا فحسب، ولكن توجد أنواع عديدة منه في الشرق الأوسط أيضاً. تُعد البهـارات الهنديّة من أكثر وأشـهر البهـارات العالمية تميّزاً في قوة رائحتها وحِدّة طعْمـَها الذي يعطي الأطباق نكهة جعلتها في أهم قوائم الأطعمة العالمية. وبهـارات البرياني تتشابه كثيراً في مكوّناتهـا الأســاسـية إلى حـَـدٍّ كبير ولكـن نجد أن في عالم البرياني الفسـيح هناك بعض الإضـافات وذلك تبعـاً للأذواق والعادات الغـذائية للشـعوب أو لإعطاء ميزة وطعم معين يميّز الأطباق عن بعضها ليكون الطبق معرّفا للمكان الّذي أتى منه. الاسم مشتق من الكلمة الفارسية (بريان) التي تعني «المقلية» أو «المشوية».
