I trigliceridi (detti anche triacilgliceroli) sono esteri neutri del glicerolo. Al posto dei gruppi ossidrilici sono presenti le catene di tre acidi grassi. Il glicerolo è infatti un alcool costituito da una catena di tre atomi di carbonio (C) con un gruppo ossidrilico (OH) legato a ciascun atomo di carbonio. Gli acidi grassi sono uniti all'alcol tramite legami esterei in seguito a una reazione di condensazione, con l'eliminazione di una molecola di acqua (H2O) per ogni acido grasso. I trigliceridi fanno parte della famiglia dei gliceridi assieme ai monogliceridi e digliceridi. Costituiscono una parte importante dell'olio vegetale e del grasso animale.
