Jaggery is a traditional non-centrifugal cane sugar consumed in the Indian subcontinent, Southeast Asia, North America, Central America, Brazil and Africa. It is a concentrated product of cane juice and often date or palm sap without separation of the molasses and crystals, and can vary from golden brown to dark brown in colour. It contains up to 50% sucrose, up to 20% invert sugars, and up to 20% moisture, with the remainder made up of other insoluble matter, such as wood ash, proteins, and bagasse fibres. 石蜜又稱崖蜜、岩蜜,現在常稱為片糖,是指甘蔗汁经过太阳暴晒后而成的固体原始蔗糖。明李时珍《本草纲目》石蜜条:“石蜜,白沙糖也,凝结作饼块者为石蜜”。清张澍辑《》说:“石蜜非石类,假石之名也。实乃甘蔗汁煎而暴之,凝如石而体甚轻,故谓之石蜜”。 现在用于烹调的片糖,就是古时的“石蜜”。杜甫有《发秦州》诗:“充肠多薯蓣,崖蜜亦易求。”
