L'omelette (termine francese, raramente adattato in omeletta) è un piatto a base di uova rapidamente cotte con burro o olio in una padella. Talvolta, per ottenere una consistenza soffice dell'omelette, vengono impiegati solo gli albumi delle uova, sbattuti con una piccola quantità di latte (oppure anche con dell'acqua). In questo modo vengono rimossi il grasso e il colesterolo del tuorlo. È di uso comune piegare l'omelette affiancata da un contorno che può essere composto da formaggio, erba cipollina, verdura, carne (soprattutto prosciutto), funghi. Spesso all'estero e nel mondo l'omelette viene confusa con la frittata. La differenza è che l'omelette viene cotta solo da una parte e poi viene ripiegata.
