Mucins () are a family of high molecular weight, heavily glycosylated proteins (glycoconjugates) produced by epithelial tissues in most animals. Mucins are distinguished between membrane-bound mucins, forming the glycocalyx, or secreted mucins, forming mucus-gels. These mucus gels cover the wet epithelium, serving functions from lubrication (as seen e.g. in the eyes), to physico-chemical barrier formation, protecting against foreign particles and pathogens as seen in e.g. the lungs or intestine. Lactoferrin (LF), also known as lactotransferrin (LTF), is a multifunctional protein of the transferrin family. Lactoferrin is a globular glycoprotein with a molecular mass of about 80 kDa that is widely represented in various secretory fluids, such as milk, saliva, tears, and nasal secretions. Lactoferrin is also present in secondary granules of PMNs and is secreted by some acinar cells. Lactoferrin can be purified from milk or produced recombinantly. Human colostrum ("first milk") has the highest concentration, followed by human milk, then cow milk (150 mg/L).
alpha fetoprotein
Alpha-fetoprotein (AFP, α-fetoprotein; also sometimes called alpha-1-fetoprotein, alpha-fetoglobulin, or alpha fetal protein) is a protein that in humans is encoded by the AFP gene. The AFP gene is located on the q arm of chromosome 4 (4q13.3). Maternal AFP serum level is used to screen for Down syndrome, neural tube defects, and other chromosomal abnormalities.

Gliadins, which are a component of gluten, are essential for giving bread the ability to rise properly during baking. Prolamins are a group of plant storage proteins characterised by a high glutamine and proline amino acid content. They are found in plants, mainly in the seeds of cereal grains such as wheat (gliadin), barley (hordein), rye (secalin), corn (zein), sorghum (kafirin), and oats (avenin). They have poor solubility in water and solubilise best in strong alcohol (70–80%), light acid, and alkaline solutions. Glutenin (a type of glutelin) is a major protein within wheat flour, making up 47% of the total protein content. The glutenins are protein aggregates of high-molecular-mass (HMW) and low-molecular-mass (LMW) subunits with molar masses from about 200,000 to a few million, which are stabilized by intermolecular disulfide bonds, hydrophobic interactions and other forces. Glutelins are a class of prolamin proteins found in the endosperm of certain seeds of the grass family. They constitute a major component of the protein composite collectively referred to as gluten. Glutenin is the most common glutelin, as it is found in wheat and is responsible for some of the refined baking properties in bread wheat. The glutelins of barley and rye have also been identified. Glutelins are the primary protein form of energy storage in the endosperm of rice grains.

Glomalin is a hypothetical glycoprotein produced abundantly on hyphae and spores of arbuscular mycorrhizal (AM) fungi in soil and in roots. Glomalin was proposed in 1996 by Sara F. Wright, a scientist at the USDA Agricultural Research Service, but it was not isolated and described yet. The name comes from Glomerales, an order of fungi. Most AM fungi are of the division Glomeromycota. An elusive substance, it is mostly assumed to have a glue-like effect on soil, but it has not been isolated yet.
